Cooking for a Crowd: Walking Tacos

I have to admit that I had never heard of Walking Tacos until about six months ago.  I shocked everyone around here by saying, “A what?”  I had my reservations, since home made tacos are one of my favorite meals, but I was pleasantly surprised when I went to a graduation party and had a chance to experience this phenomena for myself.  If you are feeding a crowd (especially a crowd of youngsters) and need an easy idea with little cleanup, then this recipe is perfect.

You will need lots of snack sized bags of Doritos.  You can usually buy them by the case, and if you are feeding a big group, then your best bet is to try Costco or Sam’s to get a huge box.  If you are preparing food for a fundraiser of some kind, call around to some grocery stores and see if you can get some donated.  You can usually find someone to take you up on it.

Basically, here is how it works: you will crumble the chips in the bags and then cut the tops of the bags off.  You can also turn the bag on its side and cut the bag along the edge from top to bottom.  Set the bags in a box so that they remain upright.  Set out your favorite taco toppings (taco meat, sour cream, lettuce, shredded cheese, tomatoes, salsa, peppers, onions, etc.).  You will want to provide plenty of forks and napkins, and try putting these things at the end of your taco bar rather than the beginning so that your guests don’t have to carry all that stuff while they are preparing their food.  Your guests will just load up their Walking Taco right into the bag, and then, for the best part, will just throw the bag away when they are done.  No mess! (well, no dishes anyway.  you can’t really have Walking Tacos with no mess.)
