Artichoke Dip

This is a great hot dip for pita bread or the crackers of your choice. (serves about 8).

Ingredients:

Two 14 ounce cans of artichoke hearts, drained and chopped.

One cup grated Parmesan cheese

One cup mayonnaise (fat-free or lite will work)

One teaspoon garlic salt

One half teaspoon ground black pepper

One tablespoon fresh lemon juice

Pita bread or crackers for serving.

Remove the artichokes from the can and finely chop.

I like stainless steel – at any rate –  in a large bowl combine the chopped artichoke hearts, mayonnaise, lemmon juice, and Parmesan cheese, garlic salt, and pepper.  Put the mixture into a baking dish suitable for serving.

Bake at 375 degrees for about 20 minutes or until the top is golden brown.  Serve warm with your choice of crackers or bread.
